
At my house, vegetables have to be introduced carefully and are often used sparingly. My beloved recounts a family legend about her, a plate of cauliflower and a dad suddenly in charge while mum was out for the evening… which is why it’s a little-used veggie at our house. Having said that, here’s a Veteran Move for the ages… or maybe better said… the AGED 🙂 Replace straightforward white or even brown rice with cauliflower rice! It’s incredibly easy to make and in many cases it’s almost indistinguishable from the world’s most popular side staple.
Cauliflower is an incredibly nutritious ‘cruciferous’ vegetable, a group of plants known for being low-calorie while containing a high nutrient content. Other members of the family include broccoli, Brussels sprouts, bok choy, cabbage, collards, and kale.
Cruciferous vegetables, like cauliflower, are unique because they contain sulfur compounds called glucosinolates which, research shows, possess inflammation-reducing and cancer-fighting properties that also promote brain and eye health.
Yep, best of all, a cup of cauliflower contains just 25 calories and is about 10% carbohydrates… compare that to a cup of jasmine rice with 660 calories and about 90% carbs.
And, believe me, it tastes like rice!
