You don’t need a genuine Molcajete mortar and pestle to make delicious guacamole… but doesn’t it look great?
It’s hard to beat good guacamole, the favourite dip of parties, dinner dates, game night and of course taco Tuesday! Guac has become so popular you can buy mass produced tubs of it at convenience stores, gas stations and grocery stores alike. While it may make life easy to pick some up on your way to the party, absolutely nothing beats a home made bowl of the green nectar of the gods!
Once you collect the ingredients, good Guacamole is actually pretty easy to make. Now, I’m lucky. My oldest daughter, a very thoughtful gift-giver and a major guac lover, gave her old daddio his very own Molcajete (a Mexican mortar and pestle). It’s a fantastic kitchen tool that makes it very easy to make guac and, you can also serve the finished product in it. But, it’s not necessary to have one to make a delicious serving right in your own kitchen. All you need is a bowl, a sharp knife, a good sized serving spoon and a fork.
Recipes vary but a red onion, a Roma tomato, one to two cloves of garlic clove, about a teaspoon of juice from a fresh lime, a medium sized, just ripe avocado and a table spoon of chopped cilantro are usually all you need for great guacFirst, mince about two tablespoons of red onionA Veteran Move would be to use a garlic press to get the best possible mince for the garlicUse a teaspoon to scoop out the seeds and jelly from half a Roma tomatoThen , dice the tomato nice and fineTHE Veteran Move on this dish: remove the pit from the avocado with your kitchen knife. Firmly but gently chop the knife into the middle of the pit and you’ll be able to slightly twist the pit and then pull it outUsing a tablespoon, scoop out both halves of the avocadoDice the avocado to make it easier to mash laterChop up between a teaspoon and tablespoon of cilantro (very optional at my house!)Squeeze out about a teaspoon of fresh lime juiceBefore you mash it all together, gently stir the ingredients to make sure everything is well distributed before crushing them into the finished treatI have the luxury of using my pestle but you can use a spoon and a fork to crush it altogether
