Baking chicken breasts stuffed with guacamole is a very easy way to look like a champ in the kitchen. This versatile protein is probably the most popular choice the world over. Once you’ve mastered the simple breast bake the next obvious step is to start stuffing your chicken with delicious sides. It’s the easiest way I know to add variety to the menu… and look like a hero!

Having said all that, it’s an obvious next step to combine the world’s most popular side with it’s favourite protein. Stuffing guacamole into a boneless chicken breast is a Veteran Move for all men in the kitchen. It requires just a little practice to make sure you pull it off without making a mess. And, of course, a sharp knife. Additionally, dressing the chicken first with an easy to pull together Tex Mex Chicken spice rub is yet another Veteran Move you can replicate again and again with other dishes.

INGREDIENTS

  • 4 boneless, skinless chicken breasts
  • 1/2 cup fresh, home made guacamole
  • 1/4 cup Tex Mex Chicken Rub (see below)
Preheat oven to 405 F and prepare chicken while it heats up

It's a great idea to have the Tex Mex Chicken Rub prepared in advance. I keep it in an empty pepper container
Tex Mex Chicken Rub:
2 tsp. kosher salt 
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. dried oregano 
1/2 tsp. onion powder
1/2 tsp. cumin
2 tbsp. extra-virgin olive oil
Drizzle chicken with olive oil and sprinkle with Tex Mex Chicken Rub

With a sharp paring knife carefully cut a pocket into each breast

Using a teaspoon fill each pocket with guacamole to taste ( 1-3 tablespoons per pocket)

Place the stuffed breasts onto a cookie sheet covered with parchment paper and bake them on the middle rack in the oven for approximately 25 minutes until it reaches an internal temperature of 165 degrees F
