
At my house veggies have always been very controversial so imagine my relief when I discovered Parmesan Green Beans. My beloved spouse is a paragon of virtue in every way but one… she’s always been a picky eater when it comes to green things on the plate. Sooo, for years the vegetables on our dishes were limited to a very few approved choices. Enter this delicious side and the horizon started to expand.
Green beans are packed with nutrients. They keep well and are very easy to work with in the kitchen. There are about 150 different varieties of this popular dietary staple which can be found on every continent. They come in a variety of colours and around the world are referred to by many names most popularly squeaky beans, French beans, fine beans and string beans. Research also appears to suggest adding them to your diet can help reduce the risk of heart diseases and colon cancer, help control diabetes, provides a boost to the immune system, and contributes to the elimination of harmful free radicals.
The Veteran Moves for this particular dish are first, have a garlic press handy to make sure you get a maximum, juicy dice. Second, use a finely grated Parmesan cheese. I like the more powdery variety for this dish which ensures a nicely browned flavourful crust on each bean… yum!
