
Greek Chicken sheet tray is another quick and easy meal that takes about 10 minutes to prep. It also takes advantage of a delicious seasoning mix that can be used in many different settings… which is why as a Veteran Move I strongly recommend filling an old spice shaker with the seasoning mix that makes this dish so tasty and keeping it on hand. This meal is inspired by one I found at easypeazymealz.com but I’ve gone off the page a little bit. The Greek seasoning is taken from there though.
The basic recipe calls for three different bell peppers as kind of foundation vegetables. These amazing veggies pack a lot of nutritional punch and so are critical. All peppers start life on the vine as green peppers. The final colour depends on how long they’re left on the vine. They are chock full of vitamins and minerals and are strong promoters of health and wellness: they promote eye health, blood flow, weight loss, digestive and respiratory health, they possess antioxidants, they’re anti-inflammatory and boost immunity. There’s even evidence to suggest they have anti-aging properties and may even have a positive impact on your nervous system. I leave it up to you which ones you want to use but do try to mix up the colours
The recommended mix also calls for two types of squash: Green and Yellow Zucchini. Sometimes it can be tough to find the yellow zucchini so don’t sweat it. Use what you can find! I leave it to you to pick a mix you like best but, taken together this mix is really delicious and looks great on the plate. Keep in mind that generally, a good healthy rule of thumb is the more colourful your plate the more nutrition it packs. If you don’t want to become a full on nutritionist then keep the colour palette of your plate in mind.

· 1 lb Chicken Breasts (approx 2 chicken breast halves)
· 3 sweet bell peppers red orange or yellow, cut into 1/2 inch pieces
· 1 medium zucchini chopped into 1/2 inch pieces
· 1 medium yellow squash chopped into 1/2 inch pieces
1 small red onion
1/3 cup black olives
· 1 cup cherry tomatoes halved
1 1/2 lbs new potatoes
· 2 Tbs Greek seasoning blend (See Veteran Move below)
· 3 Tbs Olive oil

Divide the potatoes into a smaller casserole dish with a cover

cover the chicken breasts with a sheet of plastic wrap…

This will cut down cooking time for the chicken and helps ensure veggies and chicken will be ready at the same time

· 2 teaspoons salt
· 2 teaspoons garlic powder
· 2 teaspoons dried basil
· 2 teaspoons dried oregano
· 1 teaspoon ground black pepper
· 1 teaspoon dried parsley
· 1 teaspoon dried rosemary
· 1 teaspoon dried dill weed
· 1 teaspoon dried marjoram
· 1/2 teaspoon ground thyme
· 1/2 teaspoon ground nutmeg
· 1/2 teaspoon cinnamon
· 1 teaspoon cornstarch

Thanks to your great suggestions I have been doing many sheet pan dinners recently. Thanks Joe! Question for you…I use parchment paper rather than tin foil to line the tray. Is that ok?
